While on my last trip to Mexico I took a picture of this fruit stand. I had never seen this pink fruit before. It looked so colorful and had an interesting shape. I have heard of a prickly pear but the name of this fruit was not familiar. They said it was more like a guava. Does anyone recognize it?
Check out the color and green tips!
The inside was just as interesting. Very designer to be black and white inside. I peeled and chopped them into marguerita's. Not particularly sweet but everything taste good mixed with Tequila.
I even did a little decorating with them on the coffee table!

I have heard that is called Dragon fruit.
Just saw Dragon fruit on last night's season finale of Top Chef and thought of this post!
